Pigs in a Blanket

Yields: 18 Servings

Ingredients:

·  2 cups all-purpose flour

·  1 tablespoon sugar

·  2 teaspoons baking powder

·  ½ teaspoon baking soda

·  ½ teaspoon salt

·  4 tablespoons unsalted butter, cut in to small pieces

·  ½ cup grated cheddar cheese

·  ¾ cup buttermilk

·  9 hot dogs, cut in half

Directions:

·  Preheat oven to 400◦F.  Grease a large baking sheet.

·  Combine the dry ingredients in a mixing bowl.  Cut in the butter pieces until the mixture becomes crumbly.  Add cheese and mix until evenly distributed.

·  Make a well in the dry ingredients and add the buttermilk.  Stir well.  Let dough sit for 3 minutes.

·  Lightly dust the dough with flour and turn it on to a floured surface.  Form the dough in to a 15 x 7 rectangle with hands.  Handle dough as little as possible.

·  Using a pizza cutter, slice the rectangle in to thirds horizontally and then slice each third in to thirds vertically to get 9 small rectangles.  Cut each rectangle diagonally in to triangles.

·  Roll each hot dog up with the dough.  Place on greased baking sheet.  Bake for 12 to 13 minutes or until golden brown.  Cool on baking sheet for 3 minutes before transferring them to a wire rack.
